Ingredients for making Coxinha with potato dough:

For mass:

 450 grams of wheat flour

 1 small chopped onion

 1 chicken broth tablet

 150 grams of butter

 300 milliliters of milk (1¼ cups)

 700 milliliters of water (chicken cooking broth)

 1 cup of boiled and squeezed potato

 1 tablespoon of olive oil

 1 teaspoon of salt

For the filling:

 1 chicken breast

 1 chopped onion

 1 tablespoon of paprika

 ½ can of corn

 Salt and black pepper to taste

 2 tablespoons of olive oil

To bread:

 milk

 breadcrumbs (or breadcrumbs)

 frying oil

How to make Coxinha with potato dough:

First, fry the onion with the oil and the chicken stock. Then add the butter, milk, water, potato and salt. Leave on high heat until boiling.

As soon as it comes to a boil, add the wheat flour all at once. Lower the heat and stir over and over until it becomes a smooth, consistent ball of dough, as in the photo.

Roll out the dough on a bench and let it cool for about 3 minutes. Then knead like a dough.

For the filling, fry the onion in oil and then add the shredded chicken, corn, salt and black pepper. Saute for a few more minutes and the result will be as pictured.

Make little balls with the same amount of coxinha dough. In the palm of your hand, stretch a ball like a basket and add a spoonful of filling to the center.

Then close the edges and shape the tips of the coxinha, the result should be like in the photo.

To bread, start by passing the drumsticks in the milk.

Then pass in the breadcrumbs, pressing lightly to stick well.

And ready! Now, just fry them in very hot oil or, if you prefer, you can also freeze the coxinhas at this time, before frying.
